How To Make Sugar-Free Blueberry Muffin Recipe
Delicious muffins made with no added sugar and bursting with blueberries.
Serves:
Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Instructions

Preheat oven to 350°F and line a muffin tin with paper liners.

In a bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.

In a separate bowl, beat eggs and stir in almond milk, melted coconut oil, and vanilla extract.

Add dry ingredients to wet ingredients and mix until well combined.

Gently fold in blueberries.

Spoon batter into muffin cups, filling each about 3/4 full.

Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.

Let muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
