Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup vegetable oil
- 3/4 cup granulated sugar
- 2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
- 1 tsp vanilla extract
- 1/4 cup granulated sugar (for rolling)
Instructions

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a medium bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.

In a large bowl, whisk together the vegetable oil and sugar until combined.

Add in the flax eggs and vanilla extract, and whisk until smooth.

Slowly add in the dry ingredients, mixing until just combined.

Using a cookie scoop or your hands, roll the dough into 1-inch balls.

Roll the balls in sugar and place on the prepared baking sheet, leaving about 2 inches between each cookie.

Flatten each cookie slightly with the palm of your hand.

Bake for 10-12 minutes, until set and lightly golden on the bottom.

Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
