Ingredients
- 1/2 cup vegan butter
- 1/2 cup granulated sugar
- 1 flax egg (1 tbsp flaxmeal + 3 tbsp water)
- 1 tsp vanilla extract
- 1 lemon, juiced and zested
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp poppy seeds
Instructions

Preheat oven to 375°F and line a baking sheet with parchment paper.

In a large mixing bowl, cream together vegan butter and sugar until light and fluffy.
