Ingredients
- 1 lb boneless, skinless chicken breasts, cut into small pieces
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
- 8 corn tortillas
- Optional toppings: diced avocado, sliced jalapeño, chopped tomatoes, hot sauce
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add diced onion and minced garlic, and sauté for 3-4 minutes until softened.

Add chicken pieces to skillet, and cook for 6-7 minutes until browned and cooked through.

Stir in chili powder, cumin, paprika, salt, black pepper, and lime juice, and cook for another 2-3 minutes until fragrant.

Remove skillet from heat, and stir in chopped cilantro.

Warm tortillas in the microwave or on a hot skillet.

Serve chicken filling on top of tortillas, and garnish with desired toppings.
