Tender chicken breasts in a tangy lemon sauce with capers & parsley.
Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup gluten-free all-purpose flour
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 cup chicken broth
- 1/4 cup capers
- 2 tbsp chopped parsley
- Lemon slices for garnish
Instructions

Place chicken breasts between two pieces of plastic wrap and pound until even thickness.

In a shallow dish, mix flour, salt and pepper. Dredge chicken in flour mixture and shake off excess.

Heat oil in large skillet over medium heat. Add chicken and cook until golden brown, 3-4 minutes per side.

Remove chicken from skillet and tent with foil.

Add lemon juice, chicken broth, capers and parsley to skillet and whisk to combine. Simmer for 5 minutes.

Pour sauce over chicken and garnish with lemon slices.
