Flavorful and filling chicken fajitas made without dairy.
Serves:
Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 3 bell peppers, sliced into strips
- 1 large onion, sliced into strips
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- juice of 1 lime
- 8-10 corn tortillas
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add chicken and cook until browned on both sides, about 5-7 minutes.

Add peppers, onions, and garlic to skillet with chicken and continue cooking until vegetables are tender and chicken is cooked through, about 10-12 minutes.

Add chili powder, paprika, cumin, salt, black pepper, and lime juice to the skillet. Stir to combine and continue cooking for an additional 2-3 minutes.

Warm tortillas in a separate skillet over medium heat.

Serve chicken and vegetable mixture on warm tortillas.
