Delicious and fluffy pancakes made without dairy products, perfect for those with lactose intolerance or following a dairy-free diet.
Serves:
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 cups almond milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
Instructions
-
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
-
In a separate bowl, mix together the almond milk, vegetable oil, and vanilla extract.
-
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, a few lumps are okay.
-
Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or cooking spray.
-
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
-
Repeat with the remaining batter.
-
Serve the pancakes warm with your favorite toppings such as fresh fruit, maple syrup, or dairy-free whipped cream.
