How To Make Creamy Chicken & Mango Curry
An aromatic and creamy curry with tender chicken and sweet mango, bursting with flavors.
Serves:
Ingredients
- 500g boneless chicken, cut into cubes
- 1 ripe mango, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tbsp curry powder
- 1 cup coconut milk
- 1 cup chicken broth
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro, for garnishing
Instructions

Heat vegetable oil in a large pan over medium heat. Add onions and sauté until translucent.

Add minced garlic and grated ginger. Cook for another minute until fragrant.

Add chicken cubes and cook until browned on all sides.

Sprinkle curry powder over the chicken and stir to coat evenly.

Pour in coconut milk and chicken broth. Bring to a simmer and cook for 15 minutes, or until the chicken is cooked through and tender.

Add diced mango and season with salt. Cook for another 5 minutes, allowing the flavors to combine.

Serve the creamy chicken and mango curry over steamed rice or with naan bread.
