A delicious and refreshing salad with a Thai twist, featuring crispy veggies, crunchy peanuts, and a tangy dressing.
Serves:
Ingredients
- 4 cups mixed greens
- 1/2 cup shredded carrots
- 1/2 cup shredded red cabbage
- 1/2 cup sliced cucumbers
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/2 cup crispy wonton strips
- 1/4 cup chopped peanuts
- For the dressing:
- 1/4 cup peanut butter
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp fresh lime juice
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1/4 cup water
Instructions

In a large bowl, combine the mixed greens, shredded carrots, shredded red cabbage, sliced cucumbers, cilantro, and mint.

In another bowl, whisk together the peanut butter, rice vinegar, soy sauce, honey, lime juice, grated ginger, minced garlic, and water to make the dressing.

Toss the salad with the dressing, then top with crispy wonton strips and chopped peanuts.
