How To Make CPK BBQ Chicken Chopped Salad Recipe
A delicious and healthy salad with BBQ chicken and fresh veggies tossed in a tangy dressing.
Serves:
Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- Salt and pepper
- 1 head of romaine lettuce, chopped
- 1/2 cup black beans
- 1/2 cup corn
- 1/2 cup grape tomatoes, halved
- 1/2 cup jicama, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup cilantro, chopped
- 1/4 cup BBQ ranch dressing
Instructions

Preheat grill or grill pan to medium-high heat. Season chicken breasts with salt and pepper.

Place chicken on grill and coat with BBQ sauce. Cook for 6-8 minutes on each side, until cooked through. Let cool and dice into small pieces.

In a large bowl, combine chopped romaine, black beans, corn, grape tomatoes, jicama, shredded cheddar cheese and cilantro.

Add diced chicken to the bowl and toss with BBQ ranch dressing. Serve and enjoy.
