How To Make Courgette & Lime Cake
A delightful cake made with courgette and zesty lime, perfect for a refreshing treat.

Ingredients
- 2 courgettes, grated
- 2 limes, zested and juiced
- 150g self-raising flour
- 150g caster sugar
- 50g unsalted butter, melted
- 2 eggs
- 1 tsp vanilla extract
- 50g desiccated coconut
- 50g icing sugar, for dusting
Instructions

Preheat the oven to 180°C/350°F. Grease and line a cake tin.

In a large bowl, combine the grated courgettes, lime zest and juice, self-raising flour, caster sugar, melted butter, eggs, vanilla extract, and desiccated coconut. Mix well.

Pour the mixture into the prepared cake tin and smooth the top.

Bake in the preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Dust with icing sugar before serving.
