How To Make Coconut, rum & raisin rice pudding
A creamy and indulgent rice pudding infused with the flavors of coconut, rum, and plump raisins.

- 1 cup Arborio rice
- 2 cups coconut milk
- 1/2 cup raisins
- 1/4 cup dark rum
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Ground cinnamon, for garnish
Instructions

In a medium-sized saucepan, combine the coconut milk, rice, raisins, rum, sugar, and salt. Bring to a gentle simmer over medium heat.

Reduce the heat to low and cover the saucepan. Let the rice simmer for about 20 minutes, stirring occasionally to prevent sticking, until the rice is cooked and the mixture has thickened.

Remove from heat and stir in the vanilla extract. Let the pudding cool for a few minutes.

Serve the rice pudding warm or chilled, sprinkled with ground cinnamon for garnish.
