How To Make Classic Scones with Jam & Clotted Cream

These classic scones are light, fluffy, and perfect with a dollop of sweet jam and decadent clotted cream.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • Jam, for serving
  • Clotted cream, for serving

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.

  4. Make a well in the center of the mixture and pour in the milk and vanilla extract. Stir with a fork until just combined.

  5. Turn the dough out onto a lightly floured surface. Gently knead it a few times until it comes together. Be careful not to overmix.

  6. Roll out the dough to a thickness of about 1 inch (2.5 cm). Use a round biscuit cutter to cut out scones and place them onto the prepared baking sheet.

  7. Bake for 10-12 minutes, or until the scones are golden brown.

  8. Remove from the oven and let cool on a wire rack.

  9. Serve the scones warm or at room temperature with jam and clotted cream.
