How To Make Cheesy Eggy Bread with Chunky Salad

This dish is a delicious combination of cheesy eggy bread and a refreshing chunky salad.

Ingredients

  • 8 slices of bread
  • 4 eggs
  • 1 cup of grated cheese
  • 1/2 cup of milk
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 1 cup of cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup of olives, sliced
  • 2 tbsp of olive oil
  • 1 tbsp of lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a bowl, whisk together the eggs, milk, salt, and black pepper.

  3. Dip each slice of bread into the egg mixture, making sure both sides are coated.

  4. Heat a non-stick pan over medium heat and cook the eggy bread slices until golden brown on each side.

  5. Place the cooked eggy bread slices on a baking sheet and sprinkle grated cheese on top.

  6. Bake in the preheated oven for 5 minutes or until the cheese is melted and bubbly.

  7. In a separate bowl, mix together the cherry tomatoes, cucumber, red onion, and olives.

  8. In a small jar, combine the olive oil and lemon juice. Shake well to mix.

  9. Pour the dressing over the chunky salad and toss to coat.

  10. Serve the cheesy eggy bread with the chunky salad on the side.
