Ingredients
- 8 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large tortillas
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
Instructions

In a bowl, whisk together eggs, milk, salt, and black pepper.

Heat a large non-stick skillet over medium heat and spray with cooking spray.

Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through.

Lay out the tortillas and divide the scrambled eggs evenly among them.

Sprinkle cheddar cheese, bell peppers, onions, tomatoes, and cilantro on top of the eggs.

Roll up the tortillas, tucking the sides in, to create wraps.

Heat a clean skillet over medium-high heat and place the wraps, seam-side down, on the skillet.

Cook for 2-3 minutes on each side, until the tortillas are crisp and golden brown.
