A gluten-free and vegan option for tortillas made with chickpea flour.

Ingredients
- 1 1/2 cups chickpea flour
- 1 tsp salt
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 1/4 cups water
- 2 tbsp olive oil for cooking
Instructions

In a large bowl, whisk together chickpea flour, salt, cumin, and garlic powder.

Slowly pour in the water, whisking constantly until all the lumps have disappeared.

Let the batter rest for 10-15 minutes.

Heat a large non-stick skillet over medium heat. Add 1 tbsp of olive oil.

Pour 1/4 cup of batter onto the skillet and spread it evenly to form a thin layer.

Cook for 2-3 minutes on each side until golden brown.
