Fluffy and delicious pancakes made with almond flour, perfect for a gluten-free and low-carb breakfast!

Ingredients
- 2 cups almond flour
- 2 tsp baking powder
- 1/4 tsp salt
- 3 eggs
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1 tbsp maple syrup (optional)
- 2 tbsp coconut oil, melted
- Butter or oil, for cooking
Instructions

In a bowl, mix the almond flour, baking powder, and salt.

In another bowl, whisk the eggs, almond milk, vanilla extract, and maple syrup (if using) until frothy.

Add the dry ingredients to the wet ingredients and mix until well combined.

Stir in the melted coconut oil.

Heat a non-stick pan over medium heat and grease with butter or oil.

Pour 1/4 cup of the pancake batter onto the pan.

Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
