How To Make Tarragon Salmon with Crispy Root Chips

Ingredients
- 4 salmon fillets
- 2 tbsp of fresh tarragon, chopped
- 2 tbsp of olive oil
- 1 tsp of salt
- 1/2 tsp of black pepper
- 4 medium-sized potatoes
- 2 carrots
- 2 parsnips
- Vegetable oil for frying

Preheat the oven to 400°F (200°C).

Rub the salmon fillets with the chopped tarragon, olive oil, salt, and black pepper. Place them on a baking sheet lined with parchment paper.

Cut the potatoes, carrots, and parsnips into thin slices or strips to make the chips.

Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Carefully add the root vegetable chips and fry until golden and crispy. Remove with a slotted spoon and drain on a paper towel.

Bake the salmon fillets in the preheated oven for 12-15 minutes, or until cooked through.

Serve the tarragon salmon alongside the crispy root vegetable chips.
