How To Make Peppered Mackerel & Potato Bake

Ingredients
- 4 large mackerel fillets
- 4 large potatoes, sliced
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, combine the black pepper, paprika, dried thyme, and salt.

Place the sliced potatoes in a greased baking dish, followed by the sliced onions and minced garlic.

Drizzle olive oil over the potatoes and sprinkle half of the spice mixture. Toss to coat evenly.

Lay the mackerel fillets on top of the potato mixture.

Sprinkle the remaining spice mixture over the mackerel.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for another 15 minutes, or until the potatoes are tender and the mackerel is cooked through.

Garnish with freshly chopped parsley.
