How To Make Miso Salmon with Ginger Noodles

Ingredients
- 4 salmon fillets
- 4 tbsp miso paste
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp grated ginger
- 4 bundles of soba noodles
- 2 tbsp vegetable oil
- 2 cups sliced vegetables (carrots, bell peppers, snap peas)
- 2 green onions, sliced
- Sesame seeds, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together miso paste, soy sauce, honey, sesame oil, and grated ginger. Spread the mixture evenly over the salmon fillets.

Place the salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Meanwhile, cook the soba noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large pan or wok over medium-high heat. Add the sliced vegetables and stir-fry for 3-4 minutes, until tender-crisp.

Add cooked soba noodles to the pan and toss to combine with the vegetables.

Divide the ginger noodles among serving plates and top with miso-glazed salmon fillets.

Garnish with sliced green onions and sesame seeds. Serve hot.
