How To Make Mediterranean Fish & Couscous Recipe

Ingredients
- 4 fish fillets (such as cod or tilapia)
- 1 cup couscous
- 1 ½ cups vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat your oven to 375°F (190°C). Lightly grease a baking dish.

Season the fish fillets with salt, pepper, and half of the minced garlic. Place them in the prepared baking dish.

In a small bowl, whisk together the olive oil, lemon juice, remaining minced garlic, dried oregano, and dried thyme. Pour this mixture over the fish fillets.

Bake the fish in the preheated oven for 15-20 minutes, or until it is cooked through and flakes easily with a fork.

While the fish is baking, prepare the couscous. In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff it with a fork.

Serve the cooked fish over a bed of fluffy couscous. Garnish with fresh parsley.
