Ingredients
- 8 pickled herring fillets
- 1/2 cup white vinegar
- 1/4 cup sugar
- 1/2 onion, thinly sliced
- 2 dill pickles, thinly sliced
- 4 toothpicks
Instructions

In a small saucepan, combine white vinegar and sugar. Heat until sugar dissolves.

Place herring fillets on a plate and top each with a slice of onion and dill pickle.

Roll up tightly and secure with a toothpick.

Place rollmops in a shallow dish and pour vinegar mixture over them.

Cover and refrigerate for at least 4 hours before serving.
