How To Make Zucchini Fish Cakes Recipe

This easy-to-make recipe combines fresh zucchini and canned fish to create delicious fish cakes.

Ingredients

  • 1 can (14 oz.) canned fish, drained
  • 2 medium zucchini, grated
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 tbsp. chopped fresh dill
  • 1 egg
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  1. In a large bowl, combine all ingredients except olive oil.

  2. Heat a large skillet over medium heat. Add olive oil.

  3. Scoop up mixture using a 1/4 cup measure and form into patties.

  4. Cook patties for 2-3 minutes on each side or until golden brown.

  5. Serve with a squeeze of lemon and tartar sauce, if desired.
