Sweet potato fish cakes with a crispy outside and flaky fish inside. Perfect for a healthy and delicious meal.

Ingredients

  • 2 sweet potatoes, peeled and chopped
  • 1 lb white fish fillets, deboned and minced
  • 2 tbsp flour
  • 2 tbsp cornstarch
  • 2 tbsp chopped fresh parsley
  • 1 egg, beaten
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 3 tbsp olive oil

Instructions

  1. Boil sweet potatoes until tender, then mash them in a bowl.

  2. Add minced fish, flour, cornstarch, parsley, egg, lemon juice, salt, and pepper. Mix well.

  3. Shape mixture into patties (approx. 8).

  4. Heat olive oil in a pan over medium-high heat.

  5. Fry patties until brown on both sides and fully cooked.

  6. Serve hot with a side dish of your choice.
