These tasty patties are made with chickpeas, zucchini, and spices, and served with a side of tartar sauce.

Ingredients
- 1 can chickpeas (15 oz), drained and rinsed
- 1 small zucchini, grated
- 1 egg
- 1/4 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 2 tbsp olive oil
- Tartar sauce, for serving
Instructions

In a large mixing bowl, combine the chickpeas, grated zucchini, egg, breadcrumbs, parsley, paprika, cumin, garlic powder, salt, and pepper. Mix well.

Using a spoon or your hands, form the mixture into 8 to 10 patties.

Heat the olive oil in a non-stick skillet over medium-high heat.

Add the patties to the skillet and cook for 3 to 4 minutes on each side, until golden brown and crispy.
