- 1 lb catfish fillet, cut into bite-sized pieces
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 can diced tomatoes (14 oz)
- 4 cups chicken broth
- 1 cup water
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bell pepper, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
Instructions

In a large pot, sauté onion and garlic in olive oil until softened.

Add catfish, diced tomatoes, chicken broth, water, thyme, paprika, salt, and black pepper. Bring to a boil.

Reduce heat and let simmer for 15 minutes.

Add bell pepper, carrots, and celery. Simmer for another 15 minutes or until vegetables are tender.
