A spicy curry made with tender catfish fillets in a rich tomato and coconut milk base.

Ingredients
- 4 catfish fillets, cut into chunks
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 can diced tomatoes
- 1 cup coconut milk
- Salt to taste
- 2 tbsp oil
- 1 tbsp chopped cilantro (optional)
Instructions

Heat oil in a large pot and sauté onions, garlic and ginger paste until fragrant.

Add the spices and stir until they release their aromas.

Add the catfish chunks, diced tomatoes and salt, and cook for 10 minutes.

Pour in the coconut milk and simmer for another 10-15 minutes until the catfish is cooked through.

Garnish with chopped cilantro (optional) and serve hot with rice.
