- 2 sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 1 lb catfish fillets, cut into chunks
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add sweet potatoes and cook for 8-10 minutes, stirring occasionally.

Add red bell pepper and onion, and cook for additional 5 minutes.

Season catfish with smoked paprika, garlic powder, salt, and pepper. Add catfish to skillet and cook for 5-7 minutes until cooked through.
