Ingredients
- 4 catfish fillets
- 1 cup of cornmeal
- 1/2 cup of all-purpose flour
- 1 tbsp of baking powder
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1 egg
- 1/2 cup of milk
- 1/4 cup of vegetable oil
Instructions

Preheat oven to 400°F.

In a bowl, mix together cornmeal, flour, baking powder, salt, and black pepper.

In a separate bowl, beat together egg and milk.

Dip catfish fillets in the egg mixture, then coat in the cornmeal mixture.

Heat vegetable oil in a skillet over medium-high heat. Add catfish fillets and cook for 3-4 minutes on each side, or until golden brown.

Transfer catfish fillets to a baking sheet and bake in the oven for 10-12 minutes, or until fully cooked.

Serve with cornbread.
