Ingredients
- 1 ½ lbs salmon fillets, cut into chunks
- 2 tbsp olive oil
- 1 onion, diced
- 2 bell peppers, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onion, bell peppers, and garlic. Cook until softened, about 5 minutes.

Sprinkle smoked paprika and chili powder over the vegetables. Stir well to coat.

Add the diced tomatoes and chicken broth to the pot. Bring to a simmer.

Gently place the salmon chunks into the stew. Season with salt and pepper.

Cover the pot and let the stew simmer for about 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
