Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and diced
- 1 large egg yolk
- 1 tbsp ice water
- 1 1/2 cups fresh strawberries, hulled and halved
- 1 cup vanilla pastry cream (store-bought or homemade)
- Powdered sugar, for dusting
Instructions

In a food processor, combine flour, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.

In a small bowl, whisk together egg yolk and ice water. Gradually pour into the food processor while pulsing until dough comes together.

Transfer the dough to a lightly floured surface and shape into a flat disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat oven to 375°F (190°C). Roll out the dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.

Place a sheet of parchment paper over the dough and fill with pie weights or dried beans. Bake for 12 minutes. Remove the weights and parchment paper, then bake for an additional 10-12 minutes until the crust is golden brown. Allow it to cool completely.

Spread the vanilla pastry cream evenly over the cooled crust. Arrange the strawberry halves on top.

Dust with powdered sugar just before serving. Slice and enjoy!
