Ingredients
- 1 sheet of puff pastry
- 2 medium courgettes, thinly sliced
- 1/4 cup pine nuts
- 1 cup ricotta cheese
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet and place it on a baking sheet.

In a skillet, heat the olive oil over medium heat. Add the courgette slices and cook until softened, about 5 minutes.

Add the minced garlic, dried thyme, salt, and pepper to the courgettes. Cook for another minute.

Spread the ricotta cheese evenly on the puff pastry, leaving a small border around the edges.

Arrange the cooked courgettes on top of the ricotta and sprinkle with pine nuts.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
