Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, cold and diced
- 2 tbsp granulated sugar
- 2 tbsp cold water
- 2 cups fresh peaches, peeled and sliced
- 1/2 cup raspberry preserves
- 1/4 cup sliced almonds
Instructions

Preheat the oven to 375°F (190°C).

In a food processor, pulse together the flour, butter, and sugar until the mixture resembles coarse crumbs.

Add the cold water and pulse until the dough comes together.

Divide the dough into 4 equal portions and press each into a mini tart pan.

Arrange the sliced peaches on top of the dough in each tart pan.

Place the raspberry preserves in a small saucepan and heat over low heat until melted and smooth.

Spoon the raspberry sauce over the peaches in each tart pan.

Sprinkle sliced almonds over the top of each tartlet.

Bake for 25 minutes, or until the crust is golden and the peaches are tender.

Remove from the oven and let cool before serving.
