Ingredients
- 2 large onions, sliced
- 2 tbsp butter
- 1 tsp sugar
- 1 tsp thyme leaves
- 1 sheet of puff pastry, thawed
- 4 oz goat’s cheese, crumbled
- Salt and pepper, to taste

Preheat oven to 400°F (200°C).

In a large skillet, melt the butter over medium heat. Add the onions and cook until caramelized, about 15-20 minutes. Sprinkle with sugar and thyme leaves, and cook for an additional 2 minutes. Season with salt and pepper to taste.

Roll out the puff pastry on a floured surface to fit a 9-inch round tart pan. Transfer the pastry to the pan, pressing it down gently. Trim any excess pastry.

Spoon the caramelized onions evenly into the tart pan, then top with crumbled goat’s cheese.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and crisp.

Remove from the oven and let cool for a few minutes. Carefully invert the tart onto a serving plate, so the onions are on top.
