Ingredients
- 1 pre-made pie crust
- 2 leeks, sliced
- 1 chorizo sausage, diced
- 1 cup manchego cheese, grated
- 4 eggs
- 1 cup milk
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Roll out the pie crust and place it into a tart pan. Trim any excess crust.

In a skillet, sauté the leeks and chorizo until softened and slightly browned.
