Ingredients

  • 1 sheet of puff pastry
  • 1 cup of shredded mozzarella cheese
  • 1 cup of shredded cheddar cheese
  • 1 cup of mixed spring vegetables (such as asparagus, peas, and cherry tomatoes)
  • 1 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Roll out the puff pastry sheet onto the prepared baking sheet.

  3. In a small bowl, mix together the mozzarella and cheddar cheese.

  4. Sprinkle half of the cheese mixture evenly onto the puff pastry, leaving a small border around the edges.

  5. Toss the spring vegetables with olive oil, salt, and pepper in a bowl.

  6. Arrange the seasoned vegetables on top of the cheese layer.

  7. Sprinkle the remaining cheese mixture over the vegetables.

  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the cheese is bubbly.

  9. Remove from the oven and let cool for a few minutes before slicing and serving.
