- 1 ripe pineapple
- 1/4 cup rum
- 2 tbsp brown sugar
- 1/4 cup crème fraîche
- 2 tbsp lime juice
- 1 tsp lime zest

Preheat the grill to medium-high heat.

Cut off the top and bottom of the pineapple, then slice off the skin. Cut the pineapple into rings or wedges.

In a small bowl, mix together the rum and brown sugar until the sugar is dissolved.

Brush the pineapple slices with the rum glaze, reserving some for later.

Grill the pineapple slices for 2-3 minutes on each side, until grill marks appear. Brush with more rum glaze while grilling.

Meanwhile, in another small bowl, whisk together the crème fraîche, lime juice, and lime zest.

Remove the grilled pineapple from the grill and serve with the lime crème fraîche on the side. Drizzle with any remaining rum glaze.
