Ingredients
- 200g dates, pitted and chopped
- 100g raisins
- 150ml boiling water
- 1 tsp vanilla extract
- 100g unsalted butter, softened
- 100g brown sugar
- 2 eggs
- 150g self-raising flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions

Preheat the oven to 180°C (350°F) and grease a pudding dish.

In a bowl, pour the boiling water over the dates and raisins. Let it stand for 10 minutes.

In another bowl, cream the butter and brown sugar until light and fluffy. Beat in the eggs one at a time.

In a separate bowl, combine the flour, cinnamon, nutmeg, and salt. Gradually add this mixture to the butter mixture, alternating with the soaked dates and raisins.

Transfer the batter to the greased pudding dish and smooth the top.

Bake for 40 minutes or until a toothpick inserted comes out clean.

Allow the pudding to cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream.
