Serves:
Ingredients
- 1/2 cup (115g) unsalted butter, plus extra for greasing
- 1/2 cup (100g) packed brown sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup (65g) all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 cup (60ml) toffee sauce, plus extra for serving
- Powdered sugar, for dusting
Instructions
-
Preheat the oven to 350°F (180°C). Grease 4 ramekins with butter.
-
In a saucepan, melt the butter and brown sugar over medium heat until smooth. Remove from heat and let cool slightly.
-
In a mixing bowl, whisk the eggs and vanilla extract together. Gradually add the melted butter mixture and whisk until well combined.
-
In a separate bowl, sift the flour and baking powder together. Gently fold the flour mixture into the egg mixture until just combined.
-
Divide the batter evenly among the prepared ramekins. Place a spoonful of toffee sauce in the center of each ramekin, pressing it down slightly.
-
Bake in the preheated oven for 12 minutes, or until the edges are set but the centers are still slightly jiggly.
-
Remove from the oven and let cool for a few minutes. Carefully invert each pudding onto a plate, tapping the bottom to release.
-
Serve warm, drizzled with extra toffee sauce and dusted with powdered sugar.
