Ingredients
- 1 cup of Arborio rice
- 4 cups of milk
- 1/2 cup of sugar
- Zest of 1 lemon
- 1/2 cup of rhubarb, diced
- 1/4 cup of lemon juice
- 1 tsp of vanilla extract
- Pinch of salt
Instructions

In a saucepan, combine the rice, milk, sugar, lemon zest, and salt. Bring to a simmer over medium heat.

Reduce heat to low and cook, stirring occasionally, for 20 minutes or until rice is tender and creamy.

Stir in the rhubarb, lemon juice, and vanilla extract. Cook for another 5 minutes or until the rhubarb is soft.

Remove from heat and let cool slightly before serving. Serve warm or chilled.
