How To Make Individual Summer Puddings
This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Ingredients
- 8 slices of white bread
- 2 cups of mixed berries (strawberries, raspberries, blueberries)
- 1/4 cup of sugar
- 1 tsp of lemon zest
- 1/2 cup of water
- 1 tsp of vanilla extract
- Whipped cream or ice cream, for serving
Instructions

Remove the crusts from the bread slices and cut each slice in half diagonally.

In a saucepan, combine the mixed berries, sugar, lemon zest, water, and vanilla extract. Cook over medium heat for 5 minutes, stirring occasionally.

Dip each bread triangle into the berry mixture, making sure it is well-coated.

Line the sides and the bottom of individual ramekins or bowls with the bread triangles, overlapping them slightly.

Fill the center of each ramekin with the remaining berry mixture.

Cover the ramekins with plastic wrap and refrigerate for at least 6 hours, or overnight.

To serve, carefully remove the plastic wrap and invert each ramekin onto a serving plate. The pudding should come out easily.

Serve with a dollop of whipped cream or a scoop of ice cream.
