How To Make Homemade Vanilla Pudding

Ingredients
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 3/4 cups whole milk
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 2 teaspoons pure vanilla extract
Instructions

In a medium saucepan, whisk together the sugar, cornstarch, and salt.

Gradually whisk in the milk until the mixture is smooth.

Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. This usually takes about 5-7 minutes.

In a separate bowl, whisk the egg yolks. Gradually whisk in about 1 cup of the hot milk mixture into the yolks.

Pour the tempered egg mixture back into the saucepan with the remaining milk mixture, whisking constantly.

Cook over medium heat, stirring constantly, until the pudding thickens and comes to a boil again. This will take about 2-3 minutes.

Remove the saucepan from the heat and stir in the butter and vanilla extract until well combined.

Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, making sure the wrap touches the surface of the pudding to prevent a skin from forming.

Refrigerate for at least 2 hours or until chilled and set.
