- 1/4 cup dark rum
- 1/4 cup orange juice
- 1/4 cup breadcrumbs
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp baking powder
- 1/4 cup melted butter
- 1 egg, beaten
- 1 tbsp golden syrup
Instructions
-
In a bowl, combine the dried fruits, candied peel, almonds, rum, and orange juice. Let it soak for at least 2 hours.
-
In a separate bowl, mix together the breadcrumbs, flour, sugar, cinnamon, nutmeg, cloves, and baking powder.
-
Add the soaked fruits mixture, melted butter, beaten egg, and golden syrup to the dry ingredients. Mix well.
-
Grease a pudding basi and pour the mixture into it. Cover with a greased parchment paper.
-
Place the pudding basin in a large pot filled with boiling water, making sure the water reaches halfway up the sides of the basin.
-
Cover the pot with a lid and steam the pudding for 4 hours. Check the water level occasionally and top it up if needed.
-
Once cooked, remove the pudding basin from the pot. Let it cool slightly before turning it out onto a serving dish.
-
Serve the Christmas pudding warm with a dollop of brandy butter or custard.
