Preparation: 30 minutes
Cooking: 1 hour
Total: 1 hour 30 minutes

Serves:

Ingredients

  • 1 cup cranberries
  • 1 cup sugar
  • 1 cup water
  • 4 slices of day-old bread
  • 1 cup milk
  • 1 cup heavy cream
  • 4 ounces white chocolate, chopped
  • 2 eggs
  • 1/4 cup sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a saucepan, combine the cranberries, sugar, and water. Bring to a boil, then simmer for 10 minutes until the cranberries burst and the mixture thickens. Set aside to cool.

  3. Cut the bread into triangles and arrange them in a baking dish.

  4. In a separate saucepan, heat the milk and cream until hot but not boiling. Remove from heat and add the white chocolate. Stir until melted and smooth.

  5. In a mixing bowl, whisk together the eggs, sugar, and vanilla extract. Gradually pour in the hot milk mixture, whisking constantly.

  6. Pour the custard mixture over the bread in the baking dish. Allow the bread to soak for 10 minutes.

  7. Spoon the cranberry mixture over the custard-soaked bread.

  8. Bake in the preheated oven for 40-45 minutes until the custard is set and the bread is golden.

  9. Allow to cool slightly before serving.
