Serves:
Ingredients
- 1 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1/4 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup unsalted butter, melted
- 1/4 cup milk
- 1/4 cup brandy
- 1/4 cup molasses
- 1/2 cup dried cherries
- 1/2 cup chopped pecans
Instructions
-
Preheat your oven to 350°F (175°C). Grease a small pudding mold or a heatproof bowl.
-
In a large bowl, mix together the flour, breadcrumbs, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
-
Add the melted butter, milk, brandy, and molasses to the dry ingredients. Stir well until the batter is smooth.
-
Fold in the dried cherries and chopped pecans.
-
Pour the batter into the greased mold or bowl, filling it about 2/3 full. Smooth the top with a spatula.
-
Cover the mold or bowl with aluminum foil and place it in a larger roasting pan. Fill the pan with hot water, about halfway up the sides of the mold or bowl.
-
Bake in the preheated oven for 2 hours, or until a toothpick inserted into the center comes out clean.
-
Remove from the water bath and let cool for 10 minutes. Then, carefully invert the pudding onto a serving plate.
-
Serve warm with a drizzle of brandy sauce or custard.
