Ingredients
- 1 cup all-purpose flour
- 1 cup water
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 2 large eggs
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions

In a medium-sized saucepan, bring the water, sugar, and salt to a boil over medium heat.

Reduce the heat to low and slowly add in the flour, stirring constantly until the mixture forms a ball.

Remove the saucepan from the heat and let it cool for a few minutes.

Beat the eggs in a separate bowl and gradually add them to the dough, stirring well after each addition.

Heat the vegetable oil in a deep fryer or large pot to about 375°F (190°C).

Drop spoonfuls of the dough into the hot oil and fry until golden brown, turning them occasionally to cook evenly.

Remove the zeppole from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Sprinkle generously with powdered sugar and serve warm.
