Ingredients
- 1 pre-made pie crust
- 1 cup of toffee bits
- 1/2 cup of heavy cream
- 2/3 cup of sugar
- 4 egg yolks
- 1/4 cup of cornstarch
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 4 egg whites
- 1/4 cup of sugar
Instructions

Preheat the oven to 350°F (175°C).

Place the pre-made pie crust in a 9-inch pie dish and set aside.

In a medium saucepan, combine the toffee bits and heavy cream. Heat over medium heat until the toffee bits are melted and the mixture is smooth. Remove from heat and set aside.

In a separate bowl, whisk together the sugar, egg yolks, cornstarch, and salt until well combined.

Slowly pour the toffee mixture into the egg yolk mixture while whisking continuously.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.

Remove from heat and stir in the vanilla extract. Pour the filling into the prepared pie crust.

In a clean mixing bowl, beat the egg whites until foamy. Gradually add in the sugar, while continuing to beat, until stiff peaks form.

Spread the meringue over the pie filling, making sure to seal the edges.

Bake in the preheated oven for 15-20 minutes, or until the meringue is golden brown.

Remove from the oven and allow to cool completely before serving.
