Ingredients

  • 4 cups of fresh strawberries, hulled and sliced
  • 1 cup of granulated sugar
  • 3 tablespoons of cornstarch
  • 1/4 cup of water
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of vanilla extract
  • 1/4 teaspoon of almond extract

Instructions

  1. In a saucepan, combine the sugar and cornstarch.

  2. Gradually stir in the water and lemon juice until smooth.

  3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

  4. Boil for 2 minutes, then remove from heat and stir in the vanilla and almond extracts.

  5. Let the mixture cool for 10 minutes.

  6. Gently fold in the sliced strawberries until well coated with the filling.

  7. Pour the filling into a pre-baked pie crust and refrigerate for at least 2 hours before serving.
