How To Make Spring Onion & Dijon Mustard Chicken Pie

Ingredients
- 2 chicken breasts, diced
- 1 cup chopped spring onions
- 2 tablespoons Dijon mustard
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 1 sheet of puff pastry
Instructions

Preheat the oven to 400°F (200°C).

In a large pan, heat some oil and cook the diced chicken until browned. Remove from the pan and set aside.

In the same pan, add the spring onions and cook until softened.

Add the Dijon mustard, chicken broth, and heavy cream to the pan. Stir well to combine.

In a small bowl, mix together the flour and a little water to make a slurry. Add this to the pan to thicken the sauce.

Season with salt and pepper to taste. Return the cooked chicken to the pan and stir until well coated.

Transfer the chicken mixture to a baking dish.

Roll out the puff pastry and place it over the baking dish, sealing the edges.

Make a couple of small slits in the pastry to allow steam to escape.

Bake in the preheated oven for about 30-40 minutes, or until the pastry is golden brown.

Remove from the oven and let it cool for a few minutes before serving.
