How To Make Spanish Chicken Pie

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups cooked chicken, shredded
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup frozen peas
- 1 sheet of puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and bell peppers. Cook until softened, about 5 minutes.

Add the cooked chicken, smoked paprika, cumin, dried oregano, salt, and pepper. Stir well to combine.

Pour in the chicken broth and bring to a simmer. Cook for 5 minutes.

Stir in the frozen peas and cook for an additional 2 minutes. Remove from heat and let cool slightly.

Place the puff pastry sheet on a baking tray. Spoon the chicken mixture onto one half of the pastry, leaving a border around the edges.

Fold the other half of the pastry over the filling and press the edges to seal. Brush the top with beaten egg.

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and crispy.
